Cauliflower Fried Rice

I know no one reads the blog that precedes the recipe, but trust me and read the few short words that need to be said here:


I want to make this clear - I'm not saying you should cut out rice and replace it with cauliflower in every aspect of your life. You know that ain't my style 💁🏼‍♀️


I'm anti-restriction and if you want real fried rice then you should definitely make it in it's full glory, carbs and all.

But if you need to boost your vegetable intake and want to do it in a tasty way, this recipe is a MUST.


I was personally blown away at how much I enjoyed this despite the lack of carbs because it packs flavor. I'm pretty sure this is the ONLY way you can get me to eat peas.


Now that I've said my piece, let's give you what you're here for.



Ingredients:

▫️ 1 bag of frozen mixed vegetables

▫️ 1 bag of frozen riced cauliflower

▫️ 3 eggs

▫️ 2 tbsp butter*

▫️ 3-4 tbsp soy sauce

▫️ sesame seeds (optional)

▫️ sliced green onions (optional)

▫️ salt & pepper to taste


* To me it's not fried rice if you don't cook with butter, but if you want a healthier swap opt for ghee or avocado oil.


Instructions:


1. Heat butter in a pan on medium high. Add cauliflower rice and mixed vegetables and cook until softened.



2. Move the vegetables to half the pan and let sit (this lets some of the bottom vegetables get a little crisp). Scramble your three eggs and add to the other half of the pan. Cook the eggs all the way through, mixing from time to time.



3. Mix the cooked eggs in with the rest of the vegetables. Pour soy sauce along the edges of the pan around the mixture, and then mix together to distribute the sauce. Season with salt and pepper to taste.



4. Flatten the mixture across the entire pan and let cook for longer to get more crispy, about 2-3 minutes.


5. Top with sesame seeds and/or sliced green onions (optional) and enjoy!
