Banana Walnut Chocolate Chip Kodiak Cake Pancakes

If you follow me on Instagram, you know that our Sunday pancakes are a ritual. While we make plain pancakes for the weekday pre-workout meal, we like to spruce up our Sunday pancakes with some extra ingredients.





INGREDIENTS

  • 2 cups of Kodiak Cake pancake mix

  • 1 tsp of vanilla extract

  • 2 tsp of cinnamon

  • 2 eggs, lightly beaten

  • 1 cup of milk (we use Almond Milk)

  • 1 banana, chopped

  • 1/3 cup of chopped walnuts

  • 1/3 cup of chocolate chips

instructions


Heat a non-stick pan over medium heat. If you are not using a non-stick pan, you may need to grease the pan with avocado oil once hot.


Combine the pancake mix, vanilla, cinnamon, eggs, and milk into a large bowl. Mix until the batter is smooth.


Add in banana, walnuts, and chocolate chips. Mix until the ingredients are well dispersed in the batter.





Scoop about 1/4 cup of batter onto the hot pan. Cook for a few minutes each side. Pancakes should have a golden brown coloring to them. Repeat until you've used up all of the batter.





Serve with your choice of toppings. I like mine with cottage cheese and maple syrup!


Note: These are not dog friendly! We feed Thor a pancake from the plain batch.

  • TO STORE: store in air tight storage container for up to 5 days

  • TO REHEAT: Microwave for 0:30
